Pecorino carpaccio


INGREDIENTS:

300 g sweet Pecorino cheese,
4 small courgettes,
200 g cherry tomatoes,
Olys - oil from cereal and fruit,
juice of one lemon,
a few basil leaves,
salt,
pepper.
 

PREPARATION:

Remove the rind from the cheese and cut it into fairly thin slices. Wash the courgettes and cut into very thin slivers. After washing the tomatoes and removing the seeds, cut them into segments.
Dissolve the salt and pepper in the lemon juice in a bowl and then add the oil, mixing to a creamy consistency.
Arrange the Pecorino on a serving plate, lay the courgettes and tomatoes on top and dress it all with the oil mixture. Decorate with a few basil leaves and serve immediately.
