Grape harvest salad with tarragon


INGREDIENTS:

250 g cooked chicken (boiled or roast),
1 onion,
1 bunch of radishes,
100 g Edam cheese,
100 g black grapes and 100 g white grapes,
100 g green beans,
2 tomatoes,
100 g shelled walnuts (halved).

For the dressing:
1 dl Olys - oil from cereal and fruit,
1 dl Carapelli red vinegar,
jus under 1 dl rosé wine,
1/2 glass of grape juice,
1 dessertspoonful green peppercorns,
salt,
pepper,
a pinch of sugar,
a dash of Worcester sauce,
1 bunch of tarragon.
 

PREPARATION:

Slice the chicken, onion and the radishes. Cut the cheese into cubes, wash the grapes, halve each grape and remove the seeds. Clean the beans and cook for 5 minutes in salted boiling water. Peel the tomatoes, remove the seeds and cut into thin segments. Put all the different ingredients into a salad bowl with the nuts and mix.
Then mix the oil with the vinegar and rosé wine, add the green pepper and salt, pepper and Worcester sauce to taste. Mix in the freshest leaves of the already washed and finely chopped tarragon and use this sauce to dress the salad.
Before serving chill for half an hour in the fridge.
